Beef Tenderloin

This recipe is the inspiration of J.Kenji Lopez-Alt, author in the The Food Lab and the managing culinary director of Serious Eats. It consists of only 5 ingredients, but the most troublesome part in the cooking procedure is that you should let it "rest" overnight. These are the three steps of this recipe:

Salt the beef and let it rest overnight in the fridge, in order to create a better and more flavorful crust. 

Slow roast the meat in low temperature, in order to keep it extra juicy. 

Take it out of the oven and brush it with butter. Then, broil the beef for a few minutes until it gets a brown-ish color.

The beef tenderloin is ready to be served, along with board dressing or horseradish sauce, or even both!

INGREDIENTS

  • 1 (4-lb.) trimmed beef tenderloin, tied with kitchen twine
  • 4 teaspoons kosher salt
  • 1 tablespoon coarsely ground black pepper
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil

Lemon Goat-Cheese Dip

This is a very easy recipe and a great appetizer that will surely satisfy all your guests. The cooking procedure is actually very simple and and it only takes 10 minutes to prepare the dip.

You place the goat cheese in a small bowl, then you mix the thyme, lemon peel and garlic in another small bowl and you season it with black pepper. You pour half of the thyme mixture into the goat cheese, and you add olive oil to the remaining half of the thyme mixture. In the end, you place the goat cheese into the plate and put a spoon of oil-thyme over the cheese. It is usually served with toasted baguette slices!

INGREDIENTS

  • 3/4 cup of soft fresh Goat cheese (room temperature)
  • 2 teaspoons chopped fresh thyme
  • 2 teaspoons grated lemon peel
  • 1 garlic clove, minced
  • 5 teaspoons olive oil

Extra-Buttery Mashed Potatoes

Mashed potatoes are one of the easiest and simplest recipes to make. This extra buttery mashed potatoes recipe is not just that plain though, but also very delicious. Preparation can be divided into these 5 steps:

Drain the potatoes and keep 1/2 cup of the cooking liquid for later use. Put the potatoes back in the pot again and stir until dry, for about 1 minute.

Heat the milk, thyme sprigs, bay leaves (optional), and 3/4 cup butter in a small saucepan over medium heat until the butter is melted and then remove from heat.

Put the hot potatoes into a large bowl, don't allow them to cool or they will become gummy. Remove the herbs from the milk mixture and gradually pour it on the potatoes, stirring strenuously with a wooden spoon.

Season the mashed potatoes with salt and pepper and then serve them with a few pats of butter on top.

  • 4 pounds Yukon Gold potatoes, peeled, cut into 2” pieces
  • 1 tablespoon kosher salt, plus more
  • 1½ cups whole milk
  • 3 sprigs thyme (optional)
  • 2 bay leaves
  • ¾ cup (1½ sticks) unsalted butter, plus more for serving
  • Freshly ground black pepper

Apple Crumble in 10 Minutes

Apple pie is a very common winter dessert recipe, but apple crumble is the newer and better version of it, originating from Canada. In addition to being an easy recipe to make, it also has an extra fruity flavor that everyone will love. 

The cooking of apple crumble is extremely easy. First you peel and then cut the apples in 6 pieces... Congratulations, you have gotten over the most difficult part of the recipe. You heat the oven to 180C and then you pour the lemon juice with the brown sugar on the apples. For the last part, you mix flour, butter, white sugar, and a pinch of salt and rub them until you get crumbles.

In the end, you spread the crumble over the apples and you bake it for about 40 minutes. The crumble is best eaten hot alongside with ice-cream!
